Ingredients:
- 200grbeefmedallions p.p.
- 1shallotp.p.
- Smallamount garlic
- 1pieceof cooked chicory p.p.
- 200gr wildmushroommix p.p.
• 2dl demi-glace p.p. - Little cognac
Preparation:
- Prepare demi-glace fond
- Cuttheshallots
- Preparebeef medallions
- Cutthemushroom mixture
- Cookthechicory
Preparation method on the table:
- Bakebeefmedallions gently and then let them rest on the keep-warm zone
- Usethe meat stick to steam the shallots
- Thenadd the mushrooms
• Braise the cooked chicory on the side - Keepthechicory and the beef medallions warm in the keep-warm zone
- Addcognac to the mushrooms
- Addthe demi-glace, reduce and bring to taste
Presantion:
- Dressthebraised chicory on the plate.
- Placethe beef medallions against it.
- Finishwiththe mushroom sauce.
